Veggie Bolognaise Sauce

Yes, I know this isn’t tech related, but I need to write this down somewhere where I won’t lose it.

  • 3 medium/large carrots
  • 2 large brown onions (or 3-4 small ones)
  • 4 sticks of celery
  • 2 regular tins tomatoes, or one large one (Mutti are good tomatoes)
  • 1 jar Passata (again Mutti is great)
  • 1 tub tomato paste
  • Mixed herbs, extra oregano, smoked paprika, salt, pepper.

  • 400g protein – I used a 400g pack of V2 plant-based beef-style mince

Regarding the protein, you could also use 400g of beef mince, or 200g of pork mince and 200g of beef mince if you don’t want to make a vegetarian version.

First up, finely dice all of the veg. This takes approximately forever, but the finer you can dice them the better the results will be. Put them all in a large pan, add some olive oil and start cooking them over a medium to high heat.

While the veggies are cooking, brown the protein

Once the protein is nicely browned, and the veggies are softened and translucent, add them together

Next, add all of the tomato things – tinned tomatoes, tomato paste and passata.

And finally, season it well with the salt, pepper, herbs and spices, and simmer for as long as you can. At least half an hour is good, but if you can simmer it for a few hours, the veggies will be melt-in-your-mouth soft, and the flavours will really develop.

Serve on top of whatever pasta you want – or use it in a lasagne, or my kids actually love having it on top of rice…
