This dessert is so easy to make, you can throw it together in about 5 minutes and then in the oven it goes where it makes itself for you.
Ingredients
- 4 Eggs
- 120g melted butter or margarine
- ½ Cup plain flour
- ½ Cup sugar
- 1 Cup shredded or desiccated coconut
- 2 Cups full-cream milk
- 2 Teaspoons of Vanilla Essence
Preheat the oven to 170°C
Mix everything together in a large mixing bowl and pour into a baking dish. It will rise somewhat, so make sure it’s not full to the brim.
Bake for 45 minutes to an hour. Check it after ¾ of an hour to see if it’s browning up nicely on top. Poke it in the middle with a skewer and if it comes out clean, then it’s cooked. Leave it to cool slightly, if you can, and eat.
I don’t know how it does it, but from a runny liquid in the baking dish, it makes it’s own pastry at the bottom, the middle turns into a delicious vanilla custard and the coconut rises up to the top where it gets all crispy and toasted.
