Safari 5 is now out, and there are some great Safari Extensions already up to be downloaded.
In the Preferences -> Advanced you will need to tick the box for Show Develop menu in menu bar and then under the Develop menu you need to go in and Enable Extensions.
Once this has been done, it’s simply a matter of downloading and double-clicking on a .safariextz file and Safari asks you if you want to load it. There will then be an Extensions section in your Safari preferences where you can enable/disable, remove and update extensions.
One that I’ve been hanging out for that is great for users of Google Reader is a Safari 5 Port of Helvetireader.
